Abstract (English): The experiment was to study the effect of rapeseed meal fermented by Aspergillus niger on growth performance, meat quality and serum biochemical indexes of finishing pigs. A total of 72 'Duroc×Landrace×Yorkshire' finishing pigs with an average weight of 52 kg were randomly divided into four groups, with three replicates in each group, and six pigs in each replicate. The pigs in control group were fed with corn soybean meal based diet. Group 1, group 2 and group 3 used 6%, 8% and 10% fermented rapeseed meal to replace soybean meal in basic diet. The test period was 30 d. The results showed that compared with control group, the average daily feed intake of pigs in three test groups was significantly increased (P<0.05). Compared with control group, the average daily weight gain of group 2 was significantly increased (P<0.05), and the feed to gain ratio was significantly decreased (P<0.05). The hydraulic capacit of group 3 were significantly higher than those of other groups (P<0.05). The backfat thickness of group 1 was significantly lower than that of control group (P<0.05). The crude fat content of group 3 was significantly higher than that of other groups (P<0.05), and the water content of group 2 was significantly higher than that of control group (P<0.05). Compared with control group, the content of BUN in pig serum of each test group was significantly reduced (P<0.05). The content of TP in serum of finishing pigs in group 3 was significantly higher than that of other groups, and the content of ALB in serum of group 2 and group 3 was significantly higher than that of group 1 and control group (P<0.05). The study indicates that fermented rapeseed meal can improve the quality of pork, significantly improve the growth performance of finishing pigs and the absorption and utilization of protein, and 8% replacement ratio is better. Abstract (Chinese): 试验旨在研究黑曲霉发酵的菜籽粕对育肥猪生长性能、肉品质及血清生化指标的影响。选取72 头平 均体重约为52 kg的"杜×长×大"生长育肥猪, 随机分为4组, 每组3个重复, 每个重复6头猪。对照组猪饲喂玉 米-豆粕型基础日粮, 试验1 组、试验2 组、试验3 组分别使用6%、8%、10% 发酵菜籽粕等量替代基础日粮中豆 粕。试验期30 d。结果显示:与对照组相比, 3 个试验组猪的平均日采食量显著提高(P<0.05), 试验2 组猪的平 均日增重显著提高(P<0.05), 料重比显著降低(P<0.05)。试验3 组猪肉的系水力显著高于其他组(P<0.05), 试 验1 组猪的背膘厚度显著低于对照组(P<0.05)。试验3 组猪肉的粗脂肪含量显著高于其他组(P<0.05), 试验2 组 猪肉的水分含量显著高于对照组(P<0.05)。与对照组相比, 各试验组猪血清尿素氮(BUN) 含量显著降低 (P<0.05)。试验3 组育肥猪血清总蛋白(TP) 含量显著高于其他组, 试验2 组和试验3 组育肥猪血清白蛋白 (ALB) 含量显著高于试验1 组和对照组(P<0.05)。研究表明, 发酵菜籽粕能够改善猪肉品质, 显著提高育肥猪 的生长性能和对蛋白质的吸收利用, 以8% 替代比例效果较好.
