| مستخلص: | Currently, shark liver oil is packaged in soft capsules made of gelatin. This study aimed to compare the quality of commercial shark liver oil in soft capsules (Fishqua®) with fish oil filled in carrageenan capsule shells. The research parameters used were free fatty acid (FFA) and peroxide value. Each sample was put into a plastic bottle and placed in a climatic chamber with a temperature setting of 40°C and 70% RH, where sampling was carried out every 10 days for 50 days. The observations showed physical changes in carrageenan capsules and soft gelatin capsules. The results of the FFA and the peroxide value showed significant differences. During storage, the FFA value increased, but a drastic increase occurred in the carrageenan capsule shell, which reached 16.22% on the 40th day of measurement and continued to increase on the 50th day of measurement, which reached 21%. In another case, the FFA value in soft gelatin capsules began to increase steadily and had an FFA value of 14.36% on day 50. Meanwhile, the peroxide value of shark liver oil stored in carrageenan capsules was measured to be very high, reaching 78.47%, compared to those stored in gelatin capsules, which only reached 21% on day 50. From the data obtained, shark liver oil is not recommended to be stored using carrageenan capsule shells. [ABSTRACT FROM AUTHOR] |
