Abstract (English): The excellent lactic acid bacteria suitable for fermentation of mudskipper (Boleophthalmus pectinirostris) feed were isolated from its intestine, and the fermentation conditions were optimized. 22 strains of lactic acid bacteria were isolated and purified by calcium solubilization method. Strain Bp1 of lactic acid bacteria with good fermentation performance was obtained through comprehensive evaluation of its acid-producing ability, bacteriostatic ability, bile salt resistance, acid resistance and feed fermentation performance. Combining the biochemical results and 16s rRNA evolution analysis, the strain Bp1 was identified as Limosilactobacillus fermentum. Commercially available mudskipper feed as raw material, the Bp1 strain was added and orthogonal experiments were carried out on four factors: inoculation amount, fermentation temperature, initial water content and fermentation time. The optimal fermentation process was determined as inoculation amount of 2.0%, fermentation temperature of 37 ℃, initial water content of 60% and fermentation time of 3 d. The crude protein content of fermented feed under the optimal conditions was 38.15%. The results of the study provide a theoretical basis for the preparation of fermented feeds for mudskipper. Abstract (Chinese): 从大弹涂鱼肠道中分离适用于发酵大弹涂鱼饲料的优良乳酸菌, 并优化其发酵条件。采用钙溶圈法分离纯化得到 22 株乳酸菌, 通过对其产酸能力、抑菌能力、耐胆盐能力、耐酸能力、发酵 饲料性能进行综合评价, 得到一株发酵性能良好的乳酸菌菌株 Bp1。结合生化结果和 16S rRNA 进化 分析,菌株 Bp1 鉴定发酵黏液乳杆菌。以市售普通大弹涂鱼饲料为原料, 加入 Bp1 菌株并对接种量、发酵温度、初始含水量、发酵时间四个因素进行正交试验, 确定最佳发酵工艺为接种量 2.0%、发酵温 度 37 ℃、初始含水量 60%、发酵时间 3 d, 最优条件下发酵饲料的粗蛋白含量为 38.15%。研究结果为 大弹涂鱼发酵饲料的制备提供了理论基础。 [ABSTRACT FROM AUTHOR]
