مستخلص: The quality of eggs for human consumption is monitored considering physicochemical, organoleptic, microbiological and nutritional parameters. To study whether the laying hen rearing system (cage, soil/floor and free range) influences the physicochemical parameters of eggs, such as air cavity, albumen height, Haugh units, weight, yolk color and pH, a sample of 144 eggs of each type of laying hen rearing system (6 eggs collected for 24 weeks) from a Portuguese industry was considered. The data were obtained in the farmer's indoor lab and we present in this work the comparative statistical analysis based on the one-way ANOVA performed on the egg weight variable. For a significance level of 5%, there is a statistically significant difference in the average weight of the eggs (Tukey test was used for multiple comparisons), where eggs from laying hens raised on the ground have the lowest weight and those from hens raised in cages the highest.
