مستخلص: In this experiment, four wild edible plants of Apiaceae species were studied, and their morphological indexes, ash, polysaccharide, protein, fat and mineral contents were determined. Significant variations were found in the content of vitamin C. Angelica czernaevia had the highest content (94.23 mg/100 g). According to the estimate of liquid/mass chromatography, Heracleum moellendorffii and Pimpinella brachycarpa had higher content of flavonoids. There was a significant correlation between phenolic compounds contained in four kinds of wild celery and their antioxidant activities. The results show that four kinds of wild celery have rich nutritional value and potential as functional food raw materials. [ABSTRACT FROM AUTHOR]
