| Abstract (English): |
The aim of this study was to evaluate the prevalence of Salmonella spp. in pig farms in the Czech Republic. Samples were taken from fattening pigs from eight farms. Tonsils, mesenteric lymph nodes, and caecal contents were sampled from 120 pigs. A total of 360 samples were analysed. Cultivation methods have been used to salmonella detection. Suspect isolates were identified phenotypically. Serotyping was performed by slide agglutination method. The multiplex polymerase chain reaction method was used to detect genes encoding flagellar proteins. Salmonella spp. was isolated in 3 samples (0.83%). S. Typhimurium, S. Derby and monophasic S. Typhimurium were determined by serotyping. Although study found a relatively low prevalence of Salmonella in fattening pigs, the consistent implementation of Salmonella control during pork production is critical in order to ensure food safety and the protection of consumer´s health. Cílem této studie bylo zhodnotit prevalenci Salmonella spp. v chovech prasat v České republice. Vzorky byly odebírány na vepřové porážce od výkrmových prasat pocházejících z osmi chovů. Odebrány byly vzorky mandlí, mezenteriálních mízních uzlin a obsahu slepého střeva od 120 prasat. Celkem bylo vyšetřeno 360 vzorků. K průkazu salmonel byly použity kultivační metody. Suspektní izoláty byly identifikovány fenotypově. Sérotypizace byla provedena sklíčkovou aglutinací. K detekci genů kódujících bičíkové proteiny byla použita metoda multiplex polymerázová řetězová reakce. Salmonella spp. byla izolována u 3 vzorků (0,83 %). Sérotypizocí byly určeny S. Typhimurium, S. Derby a monofázická S. Typhimurium. Přestože studie zjistila relativně nízkou prevalenci salmonel ve výkrmu prasat, důsledné provádění kontroly salmonel při produkci vepřového masa je pro zajištění bezpečnosti potravin a ochrany zdraví spotřebitele klíčové.
