مستخلص: Researchers from the Institute of Horticulture in Latvia have conducted a study on the biochemical profiles of four apricot cultivars grown in Latvia and their processing to obtain dried candied fruit (DCF). The study found that the apricot cultivar 'Dimaija' had the highest levels of phenolics, flavonoids, and vitamin C, while the cultivar 'Boriss' and fruit from a Greek market had the lowest values. The content of bioactives in DCF was found to decrease due to thermal lability, but the content of cell wall-bound phytochemicals increased. The study concludes that apricot fruits retain bioactives in DCF and can be considered a functional food, but their consumption should be in moderation due to the high sugar content.
