Abstract (English): The article "Sustainable Nutrition as a Teaching Topic" emphasizes the importance of nutrition and food in chemistry lessons. The increasing world population and the challenge of providing all people with energy and clean drinking water make food security an important issue. Food production and processing have ecological, economic, and social impacts that should be discussed. The article also deals with nutrition trends and their effects on children and adolescents in Germany, particularly the consumption of meat and sausage products. In chemistry lessons, methods of food analysis can be applied to examine the composition of food and to illustrate the importance of analytics for the assessment of food. [Extracted from the article]
Abstract (German): Ohne Chemie ist eine auf Nachhaltigkeit ausgerichtete Nahrungsmittelproduktion unmöglich. Trotzdem sind Ernährung und Nahrungsmittel im Chemieunterricht höchstens Nebensache. Sich umfassender mit diesen Themen zu beschäftigen, würde Lernende zur Mündigkeit und Teilhabe erziehen – in Bezug auf Ernährung und damit auf die Gesunderhaltung einer Gesellschaft.
