The article presents a study of the toxicological aspects of yellow and white gari flour and beef in Nigerian markets. It says that white gari samples have lower nitrate contents than yellow gari, illustrating that white gari is highly susceptible to nitrate. It says that the nitrate contents of stored beef are inversely related to nitrite contents, suggesting the conversion of nitrate to nitrite. |
