Brewer’s spent grain is the main solid by-product of the brewing industry, mainly used as feed, but could also be used for the production of various bio-based products based on the principles of a circular and sustainable bioeconomy. This presentation will provide insight into the availability of beer wort in the world, its chemical characterization, and its current and potential uses. Then, general aspects of solid- state fermentation and its application in biomodification of brewer’s spent grain for targeted upgrading through cascade production of value-added products, food, feed, and biofuels will be explained. Finally, the emerging market for value-added products that can be produced from brewer’s spent grain is presented.
