Reactive oxygen species are the main reason for the most important chronic diseases. Antioxidant compounds are known to be effective in the prevention and treatment of these diseases. Plant-derived natural antioxidant compounds have long been used for this purpose. Lycopene, a noncyclic carotenoid found in tomatoes, is the most effective free radical scavenger in vitro of all carotenoids. It has been shown to increase glutathione levels, and the activities of antioxidant enzymes such as glutathione peroxidase, catalase, and superoxide dismutase. It can protect DNA, lipids, and other macromolecules with its antioxidant property. Foods that contain lycopene and lycopene supplements prevent chronic diseases related to oxidative stress. The aim of this chapter is to provide information about the antioxidant properties and beneficial effects of lycopene.
