الوصف: Pakiranje u modificiranoj atmosferi se s dolaskom novih tehnologija i sve većih zahtjeva kupaca širi i unapređuje. Pakiranje u modificiranoj atmosferi je smjesa različitih vrsta plinova (kisik O2, ugljični-dioksid CO2 i dušik N2) u različitim omjerima. U radu je određen ukupni broj aerobnih mezofilnih bakterija u svježem junećem i svinjskom mesu pakiranom u modificiranoj atmosferi, te nepakiranom meso kao kontrolnim uzorcima, kroz šest dana pohranjenima na temperaturi od 4ºC. Ukupni broj bakterija bio je niži u mesu pakiranom u modificiranoj atmosferi i kretao se od 7 x 102 /g prvog dana pohrane junećeg mesa do 2,5 x 106/g šestog dana pohrane. U kontrolnim uzorcima junetine već prvog dana pohrane ukupni broj iznosio je 8,8 x 104/g, a već četvrtog dan bio je 4,2 x 106/g da bi na kraju pohrane iznosio 1,6 x 107/g. U uzorcima svinjetine upakirane u modificiranoj atmosferi ukupan se broj kretao od 1,8 x 103/g do najviše 4,2 x 106 /g šestog dana pohrane. Nepakirana svinjetina je već četvrtog dana pohrane u hladnjaku sadržavala 3,4 x 106/g, odnosno posljednjeg dana 8,8 x 107/g.
Modied atmosphere packaging has been expanded and improved with the arrival of new technologies and increasing demands of buyers. Modied atmosphere packaging is a mixture of dierent kinds of gases (Oxygen O2, Carbon Dioxide CO2 and Nitrogen N2) in dierent ratios. Total viable count of aerobic mesophyllic bacteria in fresh beef and pork meat packed in a modied atmosphere and unpacked meat as control samples through the period of six days and stored at 4ºC, was determined in this paper. Total count of bacteria was lower in meat packed in a modied atmosphere and was from 7 x 102 /g on the first day of beef meat storage, to 2.5 x 106/g on the sixth day of storage. In control samples of beef, the total count was 8.8 x 104/g even on the rst day of storage; it was 4.2 x 106/g on the fourth day, to be 1.6 x 107/g at the end of storage. The total count in pork samples packed in a modied atmosphere was from 1.8 x 103/g to the most of 4.2 x 106 /g on the sixth day of storage. Unpacked pork contained 3.4 x 106/g even on the fourth day of refrigerator storage, i.e. 8.8 x 107/g on the last day.
