Dietary fiber is becoming increasingly popular due to its effects on consumer health. In our study, the use of psyllium, pea and oat fibers in ayran production was investigated. Ayran samples containing different concentrations of dietary fibers were stored at +4 °C for 21 days. On the 1st, 7th, 15th and 21st days of storage, physico-chemical such as pH, titration acidity, dry matter, ash, oil, protein, viscosity, tyrosine, mineral matter (sodium, calcium, potassium, phosphorus and magnesium) and microbiological analyzes such as yeast-mold count, total mesophyll bacteria count, Lactobacillus bulgaricus count and Streptococcus thermophilus count were performed. As a result of analyzes, it is posibble to use of psyllium, pea and oat fibers in ayran, and thus it will be a new functional dairy product for consumers who want to get their daily dietary fiber needs from dairy products. |
